Heritage Methods, Modern Care
We refuse industrial shortcuts. Our processing methods follow centuries-old Indian Ayurvedic traditions to protect natural enzymes, micronutrients, and healing aromas.
The Traditional Bilona Ghee Process
Commercial dairy ghee is made in high-speed centrifuges by skimming raw milk cream. In stark contrast, authentic Vedic Bilona requires curdling whole A2 milk first, unlocking vital probiotic digestion enzymes.
Pasture-Grazed Gir Cow A2 Milk
Our indigenous Gir cows roam freely in open grasslands, grazing on natural herbs and green grass. They are milked with affection, ensuring zero stress and high A2 beta-casein purity.
Earthen Pot Curd Fermentation
The pure milk is gently boiled in traditional earthen vessels (matkas) and inoculated with ancient curd culture. It is left undisturbed overnight to convert whole milk into probiotic-rich curd.
Bi-Directional Wooden Bilona Churning
The curd is churned slowly using a traditional wooden churner (Bilona) in two opposite directions. This gentle movement separates the butter (Makkhan) from the buttermilk without heating the delicate fats.
Slow Wood-Fire Heating
The freshly separated makkhan is placed in a heavy brass kadhai and simmered slowly over gentle cow dung cake or wood fire embers. Water evaporates, milk solids settle, and golden aromatic ghee rises.
Fine Cloth Filtering & Glass Jar Sealing
The molten golden ghee is filtered through unbleached cotton muslin cloth, cooled naturally into its signature granular (danedar) texture, and hand-poured into sanitised glass jars.
Kachi Ghani Cold-Pressed Mustard Oil
Conventional refined mustard oil is chemically extracted with petroleum solvents (hexane) at scorching 200°C temperatures. Our wooden Ghani operates slowly to keep the temperature strictly under 40°C.
Sun-Dried Black Mustard Seeds
We source heavy, dark black mustard seeds directly from smallholder farms in Rajasthan and Haryana. The seeds are naturally sun-dried to eliminate moisture without artificial heating.
Slow Wooden Kolhu (Ghani) Crushing
Seeds are gently crushed in a traditional wooden mortar and pestle churner rotating at slow speeds. Zero friction heat is generated, preserving natural Allyl Isothiocyanate and Omega-3 fatty acids.
Natural Gravity Sedimentation Filter
No chemical bleaching agents or artificial filtering powders. The freshly pressed oil is allowed to settle naturally for 48 hours and passed through single fine-mesh cotton filters.
Glass Bottle Packing
Bottled in heavy glass bottles that preserve its intense pungent aroma, vibrant natural golden color, and raw medicinal qualities.
